Hash browns and eggs get a Mexican flair with Tex-Mex Simmer Sauce stirred in at the end.

ingredients
- 1 tablespoon vegetable oil
- ½ cup chopped red, yellow and/or green bell peppers
- ½ cup chopped onion
- 1 cup frozen shredded hash browns
- 1 cup fully-cooked turkey or pork breakfast sausage crumbles
- 4 large eggs, beaten
directions
- In large skillet, heat oil over medium-high heat. Add peppers and onions; salt and pepper as desired. Sauté 2-3 minutes.
- Add hash browns and turkey sausage; salt and pepper as desired. Cover and cook, stirring occasionally, 8-10 minutes or until desired doneness of hash browns.
- Stir in beaten eggs, stirring and move eggs around until cooked through. Remove from heat and stir in Tex-Mex Simmer Sauce.
- Serve garnished with additional Tex-Mex Simmer Sauce, if desired.
