Tex-Mex Potato Hash Scramble Recipe

Hash browns and eggs get a Mexican flair with Tex-Mex Simmer Sauce stirred in at the end.
  • Ready in: 20 minutes
  • Prep time: 10 minutes
  • Chill/Cook time: 10 minutes
  • ingredients

    • 1 tablespoon vegetable oil
    • ½ cup chopped red, yellow and/or green bell peppers
    • ½ cup chopped onion
    • 1 cup frozen shredded hash browns
    • 1 cup fully-cooked turkey or pork breakfast sausage crumbles
    • 4 large eggs, beaten
    • directions

      1. In large skillet, heat oil over medium-high heat. Add peppers and onions; salt and pepper as desired. Sauté 2-3 minutes.
      2. Add hash browns and turkey sausage; salt and pepper as desired. Cover and cook, stirring occasionally, 8-10 minutes or until desired doneness of hash browns.
      3. Stir in beaten eggs, stirring and move eggs around until cooked through. Remove from heat and stir in Tex-Mex Simmer Sauce.
      4. Serve garnished with additional Tex-Mex Simmer Sauce, if desired.

      Makes 2 servings.

Holiday preparedness

 


It's been a strange year, but the Holiday season is approaching fast. Plan ahead and get your Turkeys, Hams and other festive meal items early. If nothing else, we should enjoy a traditional family holiday meal with all the comforts we are used to. For my family, Thanksgiving looks like this - 

Turkey, dressing/stuffing (but not in the turkey), corn casserole (yummy, made with jiffy cornbread mix), cheesy cauliflower and broccoli bake, mashed potatoes with turkey gravy, my father in laws cranberry recipe, hot dinner rolls with butter, pickles, black and green olives, and cole slaw. 

I make the cranberries and cole slaw a day before. For dessert, it's a pumpkin roll, a pumpkin pie and sometimes ice cream (we love ice cream). We eat till we can't move and there are always plenty of leftovers. We love eating the left overs for days! 

The wish bone from the Thanksgiving Turkey is saved for Christmas where our two daughters aged 12 years apart, fight to the death (relax, they don't really, it's just our family joke) for the bigger break of the wish bone.

Chicken Soup in a Jar

Chicken Soup in a Jar Recipe

Create simple and delicious chicken soup in a jar with this easy recipe.
  • Prep time: 10 minutes
  • Chill/Cook time: 3 minutes


ingredients

  • 1 tablespoon chicken soup base
  • ½ teaspoon Onion Onion Seasoning (or substitute Makin' Magic chicken seasoning)
  • Dash black pepper
  • ¼ cup frozen or canned peas
  • ½ cup cooked, shredded chicken breast (made with our Makin' magic chicken seasoning)
  • 1 cup ramen noodles, cooked and drained

directions

Special equipment needed: pint-size canning jar.

  1. Assemble the soup ingredients in the jar. The soup layered up nicely in the pint jar in this order: soup base, seasonings, peas, chicken, noodles.
  2. Seal and refrigerate the soup mix until ready to eat.
  3. To prepare, open the jar and add enough boiling water to just cover the noodles.
  4. Reseal jar and let stand 2-3 minutes.
  5. Open, stir and enjoy!
